Naša kmetija se nahaja na zahodnem robu Vipavske doline. Na devetih hektarih gričevnatih vinogradov, ki so zasajeni s sortami Chardonnay, Rebula, Furlanski Tokaj, Malvazija, Pinela in Merlot pridelamo povprečno
12000 steklenic vina. V vinogradih imamo vzgojno obliko in način rezi
prilagojen majhnim obremenitvam, kar trti omogoča, da lahko po naravni poti sama razvije veliko odpornost. Maceracija in fermentacija poteka spontano, za bele sorte približno 3 dni za rdeče pa cca. 14 dni. Zorenje vina poteka 2 leti v klasičnih lesenih sodih, po stekleničenju pa še minimalno 2 leti v steklenicah.

 

Grozdje za naša vina izvira izključno iz lastne pridelave in je pridelano v skladu s pravili ekološkega kmetijstva, saj je celotna kmetija od leta 2005 vključena v certificirano ekološko pridelavo. Celoten proces od pridelave grozdja do stekleničenja vina je vedno podrejen spoštovanju naravnih procesov, kar pomeni, da je pristno, naravno vino vedno sad človekove kulture in razumevanja življenja. Pri belih vinih, pridelanih na tak način, se v zadnjem času uveljavlja ime »oranžna«, zame pa pridelava takega vina pomeni renesanso pridelave belih vin, ki je bila nekaj samoumevnega do obdobja modernega vinogradništva in sodobne enologije.

Our farm is situated on western side of Vipava valley. On 9 ha we have planted Chardonnay, Rebula, Sauvignonasse (ex-Tokai Friulano), Istrian Malvasia, Pinela and Merlot from which we produce an average total of 12.000 bottles a year. In vineyards we have an elevation methond and pruning techniques adopted to low yields what enables to vines that they are naturally more resistant to diseases and pests. Maceration is without control and fermentation isspontaneous, for white varieties 3-5 days and for reds approximately 2 weeks. Maturation of wine goes on in classical big oak barrels and after bottling at least another 2 years.

 

Grapes for our wines come exclusively from our own vineyards (we do not buy the grapes) which are cultivated organically as the whole farm Mlečnik is certified organic since 2005.
The whole process from cultivation of grapes to the bottled wine is subject to the respect of all natural processes , which means that genuine, natural wine has always been a product of human’s culture and his understanding of life.
White wines produced this way have gotten a new name as ‘’orange’’, but for me this is just a renaissance of making white wines as was usual until the period of modern vine growing and modern oenology.
